- 1 qt. chicken broth
- 3 Tbsp. olive oil
- 6 oz. Shitake mushrooms, thinly sliced
- 6 oz. Oyster mushrooms, thinly sliced
- 6 oz. Chantrelle mushrooms, thinly sliced
- 1 shallot, diced very fine
- 1 cup Arborio rice
- ½ cup Dry white wine
- Kosher salt & White Pepper to taste
- 2 Tbsp. unsalted butter
- ½ cup Reggiano Parmesan cheese, finely grated
- 1 Tbsp. White truffle oil
In a saucepan, warm the broth over low heat.
Warm 2 T. olive oil in a large saucepan over medium-high heat. Stir in the mushrooms, and cook until soft, about 3 minutes. Remove mushrooms and their liquid, and set aside.
Add 1 tablespoon olive oil to skillet, and stir in the shallots. Cook 1 minute. Add rice, stirring to coat with oil, about 2 minutes. When the rice turns clear around the edges, pour in wine, stirring constantly until the wine is fully absorbed. Add 1/2 cup hot broth to the rice, and stir until the broth is absorbed. Continue adding broth 1/2 cup at a time, stirring continuously, until the liquid is absorbed and the rice is al dente, about 15 to 20 minutes.
Stir in mushrooms with their liquid, butter, chives, and parmesan. Season with salt and pepper to taste. Place in a pile in the center of a large rim bowl and finish with a little white truffle oil.

Days of Taste is known as the signature program for AIWF. The event reaches out to thousands of children each year, with the focus and main objectives being to build a food and nutrition vocabulary, understand that locally grown ingredients are the freshest, and gain the experience to contrast flavors and develop taste memories.

Fremont Organic Garden was established through the efforts of Primal Alchemy and the American Institute of Wine & Food “Days of Taste” Program. Today the garden is a bed of inspiration for all the students.
Supporting charity “Share Our Selves”, over 700 guests enjoyed Texas Longhorn Lengua and other great food and drinks at the 15th SOS Wild and Crazy Taco Night.
A Culinary Evening with California Winemasters event supports the Cystic Fibrosis Foundation that has become one of the most successful voluntary health organizations of its kind. We are very proud to be a part of this great event.
